Grilled Ginger Garlic Lime Chicken Salad

It's a glorious Spring day. The windows are open and dinner is calling for something light and refreshing, this salad is sure to hit the spot! thank you to my beautiful model @lilythewhippet. :)




















Grilled ginger garlic lime chicken salad:

for the chicken:
1/2-1 inch ginger, fincely minced or grated
4-5 cloves garlic, pressed or minced
1 ts himalayan salt
1/2 lime, juiced
1 tb avocado oil
1/4 ts pepper
1/4 ts turmeric
1/4 ts paprika
splash hot sauce
1 lb chicken breasts, cut into pieces
(or turn into kebabs and grill with yellow and green peppers, red onions and mayyybe some pineapple, sounds good right?).

for the salad:
romaine lettuce
avocado
red or sweet onion
yellow bell pepper
cucumber

mix ingredients together in a bowl with chicken (ideally pastured, if not organic, if not anti-biotic free would be what I would aim for). i usually stab my chicken with a fork and marinate for a minimum of 15-20 mins.

heat up grill and coat with avocado oil (good for high heat cooking). cook chicken thoroughly.

serve over romaine with fresh avocado, onion, pepper and cukes (or with the grilled veggies from the kebabs!). drizzle with a light dressing of olive oil and fresh lemon/lime juice, salt and pepper for a light and fresh finish or add a little apple cider vinegar for a little zing!
